Sunday meal prep with our dietitian! 🥔
Our dietitian just finished prepping lunch for the week, just like she does every Sunday! Check out these BBQ Beef Stuffed Sweet Potatoes with Sautéed Veggies! They’re made with whole foods and packed with protein and fiber.
Ingredients:
* 4 medium sweet potatoes
* 1 lb lean ground beef
* 1 bell pepper, diced
* ½ onion, diced
* ½ lb shish*to peppers (or leave them out and use 2 additional bell peppers)
* 1 Tbsp olive oil
* BBQ sauce
* Sliced green onion for garnish, optional
* Shredded mozzarella, optional
For the beef:
* 1 tsp smoked paprika
* 1 tsp onion powder
* 1 tsp garlic powder
* 1 tsp chili powder
* 1 tsp paprika
* Splash of Worcestershire sauce
Directions:
Bake the sweet potatoes: Preheat your oven to 400°F. Cut the sweet potatoes in half lengthwise. Coat both sides with olive oil and salt, then place them cut-side down on a baking sheet. Bake for 30 minutes.
Cook the beef: Heat a skillet over medium heat. Season the lean ground beef with smoked paprika, onion powder, garlic powder, chili powder, paprika, and a splash of Worcestershire sauce. Cook until just done, then remove from the skillet. Add a drizzle of BBQ sauce and mix.
Sauté the veggies: In the same skillet, heat 1 Tbsp of olive oil over medium heat. Add the shish*to peppers, diced bell pepper, and diced onion. Sauté for 10–15 minutes, stirring occasionally. Season with salt.
Assemble: Top the baked sweet potatoes with the BBQ beef and sautéed veggies. Drizzle with BBQ sauce and garnish with sliced green onion.
