A much longer hiatus than expected, but I am back and ready to share some more recipes, both classics and some new ideas!

A tried and true favorite is shrimp scampi. A perfect broth made from white wine, garlic, stock, and butter. Mixed with shrimp and pasta… what’s not to love.

I start by boiling my pasta in salted water. Reserve a cup of the water when you’re done. Sauté your shrimp over olive oil. I season with garlic, lawrys, paprika, lemon pepper, parsley, and lemon juice.

Remove shrimp from the pan and add 2 tbsp of butter. Sauté half an onion and 4 cloves of minced garlic. Add a cup of white wine and let it reduce. Add a cup of chicken stock and a few tbsp of lemon juice. Add more lemon if you like the acidic flavor. Add a splash of cream and grate some Parmesan in there. For this one, I chopped up some sundried tomatoes and threw them in as well.

Add your shrimp back to the pan and toss the pasta until every noodle is perfectly coated. Top with some more parsley and some red pepper flakes. Easy 30 minute meal!

Nothing better than the smell of fresh baked cookies throughout your house, especially these brown butter sugar cookies with Oreos🤩

Brown Butter Sugar Cookies

1 cup salted butter, browned- melt the butter in a saucepan until it becomes a caramel color. Move to a mixing bowl and stick it in the freezer for 10 mins to solidify.

Combine:
1 1/4 cup granulate sugar
1 egg
2 tsp vanilla
1/2 tsp almond extract

Add your butter and give it a really good mix. Using a stand mixer or hand mixer with the whisk attachment is best.

In a separate bowl, combine 2 1/2 cups white flour, 1/2 tsp baking soda, and 1/2 cup baking powder. Slowly incorporate your dry ingredients to the wet.

Add your crushed Oreos and chocolate chips to the cookie dough.

Form into small balls and smush down slightly. I add a couple more pieces of Oreo or chocolate chips to the top.

Bake at 350 for 12-15 mins. I like a crispier edge and a chewy inside, so around 13 mins is where I took them out.

The second my mind thinks of fall, I really lean in.

First up- sweet potato gnocchi in a garlic brown butter sauce. Savory, hearty, flavorful… everything we love about fall comfort foods🍂

Peel, cube, and boil your sweet potato in salted water until fork tender. If you don’t have a ricer, mash the potatoes until smooth. Add your flour a little bit at a time until you get a perfect consistency to turn your mixture into a ball. I also add an egg, some garlic, and pepper. Use your fingers to form the ball, and the cut the ball into quarters. Roll out your dough until it forms a long line and cut 1 inch sized pieces.

Boil your gnocchi in salted water until they float to the top. Remove from the water and dry them. For your sauce, brown some butter in a pan with 3 cloves minced garlic. Your butter is done when it starts to turn golden brown and has a nutty scent. Add a touch of cream and Parmesan. Season with salt, pepper, sage, onion powder, and a tbsp of brown sugar.

Add your gnocchi and make sure each piece is coated in your silky sauce🤎

Probably my favorite slider recipe… and we know I love a good slider.

Make your burger mixture. I used 90/10 meat, just to save on the fat, but feel free to use 80/20 or whatever you like. Add your seasonings- salt, pepper, garlic powder, Worcestershire sauce, a touch of ketchup, and dried minced onion. Form meatballs and let them sit while your cast iron gets scorching hot. Add some avocado oil, place the meatball on the pan, and smash to form the patty. As soon as a crust starts to form, flip and add your yellow American cheese. Remove from the heat.

Take your sliders buns, cut in half, and add some Big Mac sauce and minced onion. Add your party to the slider bun, add more sauce and the top half of the bun. Brush with melted garlic butter and sesame seeds. Bake for 10 mins at 375.

After they’re done, I add some shredded lettuce and enjoy 5 of them🙂

It’s just so easy and there are so many things you can do with it.

Tonight I seasoned with some avocado oil, flour, Lawry’s salt, garlic, pepper, paprika, old bay, and lemon. Airfry at 380 for 6-7 mins until fully cooked.

While they were going I made some broccolini and Parmesan orzo.

For the glaze on top of the shrimp, melt some butter in a pan and sauté some garlic. Add the juice from half an orange, a couple tbsp of honey, salt, pepper, and red pepper flakes. Let that simmer and thicken up a bit. Brush on the shrimp right before serving.

Heading to the beach today, which always puts me in the mood for fresh seafood.

Calamari is easily one of my favorite appetizers of all time. Take your calamari rings and light dredge in a combo of flour and cornstarch seasoned with salt, pepper.c and garlic powder. Fry them in a light oil just until golden brown. Remove from heat onto a paper towel lined plate and sprinkle with salt.

Storebought cocktail sauce is fine, but homemade is truly soooo much better. Ketchup, horseradish, lemon juice, garlic, pepper… that’s it!

Before serving, squeeze some lemon on top of the calamari.

So what to do with that leftover chicken from last night’s dinner? Turn it into a salad of course.

Combined romaine and arugula in a bowl. Topped with some fresh jersey corn right off the cob, some chopped cucumber, and pickled red onion. Added that chicken and used a white balsamic shallot vinaigrette as the dressing.

To bulk it up, some rice or sweet potato would be SO good.

Dressing:

Avocado oil
White balsamic vinegar
1 clove minced garlic
1/2 shallot, finely minced
Salt, pepper, parsley to taste
Drizzle of honey
Squeeze of lemon

Give me these cookie butter cupcakes over the most decadent dessert ANYDAY.

I made a simple vanilla cupcake, but threw in some cookie butter into the batter and baked at 350 for 10-12 mins. These are the smaller cupcakes, so they take much less time.

For the frosting, beat your butter with a mixer until smooth and creamy. I use the spatula attachment to get the silky smooth texture. Add in your cookie butter, a tiny pinch of salt, and a splash of vanilla extract and keep mixing. Add in a little confectioners sugar at a time until you get the amount that you need. If your frosting looks a little dry, splash some milk in there.

I put the frosting in a piping bag and used a Star tip to frost the cupcakes. Then I topped with a biscoff cookie!

You still have time to run to the store to get everything you need for these breakfast sliders. Use whatever meat you want. I chose ham this time!

Make your scrambled eggs over very low heat. They take a little longer, but the creaminess is unmatched. I don’t season with salt until the very end because salt draws out the water in the eggs.

Slice your slider buns in half and spread some honey mustard on the bottom half. First place your ham, then your cheese (I chose cheddar for this one, but you can do whatever). After the cheese, lay your eggs down. Top with the other half of the slider buns. Brush some melted butter on top and sprinkle everything but the bagel. Bake at 350 for 10-15 mins.

What I love most about these is you can freeze them and take ‘em out in the morning before you run out the door. Just throw in the airfryer for 10 mins while you get ready.

A Caesar salad is easily one of my favorite meals.  I love topping it with chicken, but shrimp is definitely my favorite...

A Caesar salad is easily one of my favorite meals. I love topping it with chicken, but shrimp is definitely my favorite. Seared in some lemon butter and red pepper flakes until fully cooked.
