It’s time for another yummy recipe that’s both delicious and that plays well with your braces.
For our soup lovers, we’ve found an amazing slow-cooked butternut squash soup that’s soft, smooth, and packed with flavor. 😋
It’s a great choice for sensitive teeth, and it’s also an easy weeknight win. Just prep, let the slowcooker do its thing, and enjoy!
🫒 1 tablespoon olive oil
🧅 1 large onion, chopped
🧄 2 garlic cloves, minced
🎃 1 medium butternut squash, peeled & cubed
🥔 1 pound Yukon Gold potatoes, cubed
🌿 2 teaspoons fresh thyme or ¾ teaspoon dried thyme
🧂 1 teaspoon salt
⚫ ¼ teaspoon pepper
🥣 5 to 6 cups chicken or vegetable broth
🥄 Sour cream, optional
Here’s how to make it:
1️⃣ Sauté onion in olive oil for 4–5 minutes. Add garlic and cook 1 more minute.
2️⃣ Transfer to a 6-quart slow cooker. Add squash, potatoes, thyme, salt, pepper, and 5 cups of broth.
3️⃣ Cook on low for 6–8 hours, until the vegetables are soft.
4️⃣ Puree until smooth with an immersion blender, adding more broth as needed.
5️⃣ Serve warm and top with sour cream if you’d like.
