Super-simple comfort in a bowl, this carrot soup is a snap to prepare with ingredients that are easy to keep on hand.

Carrot Soup
You need…
· 1 onion, ½ lb carrots, 2 large potatoes, peeled & chopped
· 1 tbsp butter
· 4 cups vegetable stock
· salt and pepper to taste
· grated ginger (optional)

In a large pot, lightly sauté chopped onion in butter and add all ingredients except seasonings. Simmer until carrots and potatoes are tender, about 20 minutes. Blend until smooth, add seasoning, and enjoy. Make a double batch and freeze for the future!
