12 Tsps. peanut butter
100 grams low sugar or no sugar chocolate

1. Melt the butter and stir in the almond meal

Moist Orange and Chia seed cake
Sooooo good, Light and sweet with subtle orange
80 grams of carbs for the whole cake

Ingredients:
2 oranges
6 eggs
1 cup sweetener
2.5 cups almond meal
3 tspn baking powder
2 tbspn chia seeds with 9 tbspn water to soak in

Method:
Turn on oven to 160 degrees.
Put the chia seeds in a cup or bowl with the water and set aside to soak. Remove the tops of the oranges and cut a cross into the oranges approx 4cm deep.
Pop the oranges (cross side up) into a pot of boiling water and boil for about 1 hour. You may need to fill up the pot with some more water at some point.
Place whole oranges (skin and all) into a food processor and whiz until smooth.
In a mixing bowl, whisk the eggs and sweetener until fluffy then stir in the baking powder, almond meal, soaked chia seeds and the pureed oranges.
Pour into a standard cake tin, lined with baking paper.
Bake for about 45-50 mins or until the centre is firm enough that when you push lightly, it comes back up.

Chocolate Chip Cookies - Cookie Connoisseur Approved*
Approx 3 grams carbs per cookie
35 grams for whole batch (depending on which chocolate you use)

Ingredients:
1 cup almond meal
35 grams unsalted butter
1/4 tspn bicarb soda
2 tbspn sugar free maple syrup
40 grams unsweetened chocolate

Method:
Combine almond meal and bicarb soda in a bowl. Add melted butter and maple syrup and stir until a dough. Break up the chocolate into small pieces (I used mortar and pestle) and stir through.

Roll into balls approx 2.5 - 3cm in diameter and squish slightly to form a disc shape. Pop onto tray covered with baking paper and put into moderate oven for about 10 mins or until golden.

Leave to cool before you remove them from the tray.

* One of the testers of these was my 3 year old daughter - who gave the cookies 7 out of 5 :)

Banana and chocolate chip ice-cream
Makes 4 scoops

A bit over 14 grams of carbs per scoop
57 grams of carbs for whole 4 scoops

Ingredients:
2 medium frozen bananas
1 square of non sweetened chocolate

Method:
Place 2 bananas in the freezer and wait until at least the next day when they are frozen.
Take bananas from freezer and cut into slices and cut the skin off.
Pop into a blender or food processor and whiz for about 1 min.

Once finished, the banana will look a little like breadcrumbs. Pour the blended banana into a plastic container (one you can scoop out of easily). Finely grate the chocolate and stir it in. Push down slightly so the mixture compacts a little and looks more like
ice-cream.

Pop into freeze for about 30-45 mins, then scoop out and serve!

OMG Clean Snickers
Makes 10 very decent sized slices @ 10 grams carbs per slice
95 grams for whole mixture

Nougat Ingredients:
1 cup whipped peanut butter or creamy almond butter
6 tbspn sugar free maple syrup
2 tbspn coconut flour

Method:
Put all ingredients into a bowl and give a mix. Pour onto tray covered with baking paper and shape into a square approx 1cm deep. Put in freezer for at least 30 mins or until set.

Caramel Ingredients:
1 cup dates
1/2 cup coconut cream
1 tbspn vanilla essence

1/4 cup peanuts for sprinkling on top

Method:
Put dates, vanilla and cream into blender and give a good whiz. You will need to stop every now and then to scrape down the sides. When it looks pretty much like caramel, pour over the nougat base, then sprinkle peanuts on top. Pop back into freezer for about an hour.

Cut into desired sized/shaped treats.

Chocolate: Block of unsweetened/dark choc. I used 75% coco Lindt Dark.

Put the chocolate in a bowl and then into microwave for about 2.5 mins, stopping occasionally to check and stir.

Spoon chocolate over the snicker pieces and put back into the freezer to set really well.

Not bad after a couple of hours, AMAZING over night - it really gives the butter time to set and taste very much like nougat-ee goodness!

Berry slice
Moist, low carb and high fibre snack
I made 14 small slices at just over 5 grams of carbs per slice
Approx 75 grams carbs for whole batch

Ingredients:
4 wheatbix
1 1/4 cup coconut milk
1/2 cup frozen berries
1/4 cup stevia
1 cup almond meal
1/2 tsp baking soda
1/2 tsp baking powder

Method:
Break up wheatbix in a bowl, add milk, stevia and berries and give a little stir. Pop in fridge for about 1 hr.

Stir in almond meal, soda and powder and pour into small dish
(I used a bread tin). Put into moderate oven and bake for about 1.25 hours or until brown on top.

The slice will still be soft when you touch it, but a knife should be fairly clean if you insert one to test.
