Drink Inspo after spending a week in Mexico🇲🇽
Citrus Margarita
Serves 2-3
1/4 fresh lime juice
1/2 fresh orange juice
1/4 lemon juice

Combine the citrus juice. For each drink use 2oz of juice with 1.5 oz of tequila and 1 oz Cointreau. Pour over ice and stir. Lime wheel for garnish. Salud!

Happy Father’s Day to my corn lovin husband!

Corn and Arugula Salad
5 ears of corn
1/4 cup sliced red onion
1 pint of grape tomatoes cut in half lengthwise
4 cups of arugula

Dressing
1/4 cup apple cider vinegar
1/2 cup olive oil
1 tsp Dijon mustard
1 tsp kosher salt
1/2 tsp black pepper
Whisk all ingredients

Cover each corn in foil and grill on medium heat for 25 minutes turning twice. Let cool and shave each corn cob into a large bowl. Add remaining ingredients with dressing and serve cold or at room temperature.

How I get my son to eat cukes! Great side salad for a hot summer day. Serve with grilled Teriyaki salmon.
Serves 4
8 Persian cucumbers
3 teaspoon kosher salt
3 teaspoons granulated sugar
1½ tablespoons rice vinegar
2 teaspoons sesame oil
1 tsp chili oil
2 teaspoons soy sauce
1 tablespoon grapeseed oil or olive oil
2 minced garlic cloves
Thai chilies or red pepper flakes, to taste
One cup whole cilantro leaves
2 teaspoons toasted white sesame seeds.

Rinse and dry cucumbers.
 
Cut the cucumber in thirds and and then lengthwise. Place cucumber cut side down. Lay the blade of a large knife flat on top the cucumber and smash with your other hand. Cucumber will crack and seeds may separate. If so, discard seeds.
 
Place the cucumber pieces in a colander and toss with a big pinch of salt and sugar. Place a plastic bag filled with ice on top of the cucumbers to use as a weight and place the strainer over a bowl. Let drain at least 15 minutes.
 
In a small bowl, combine salt, sugar, sesame oil, olive oil, chili oil, soy sauce, and rice vinegar and whisk.
 
Drain cucumbers and transfer to a serving bowl. Add the dressing, garlic and the thai chili or flakes to taste, and toss. Garnish with cilantro and sesame seeds!

Need a side dish for a summer bbq? My mom used to make this pasta salad every Sunday in the Summer for family dinners. It’s crunchy, tangy, and hearty!

Pasta Salad
One pound cavatappi
Four chopped celery ribs
Four shredded carrots
1/2 bunch chopped curly parsley
One chopped red bell pepper
Five cups shredded mozzarella
Two cups salami cut into strips
One 2.25 can of diced olives
One 12oz jar of marinated artichokes(drained and chopped)

Dressing
One Tablespoon Dijon mustard
1/2 red wine vinegar
Two tsps kosher salt
Two tsps fresh ground pepper
3/4 cup olive oil
Combine all ingredients and whisk until emulsified.

Cook pasta in salted water al dente. Drain and put in a large bowl. Pour half of the dressing on the pasta while warm, stir, and let cool completely.

Prepare all other salad ingredients and mix in the pasta. Add more dressing to taste.

Had my first vesper martini at at Wynn Las Vegas. I really enjoyed it because I like both gin and vodka so when I can’t decide between the two, I’ll make this cocktail. I recently had a grapefruit vesper at .f10 (my fav restaurant in Palm Springs) and I thought adding a flavored vodka was really neat so I tried making one at home. Nighty night!

Combine all three ingredients into a shaker with ice:

2oz gin
2oz grapefruit vodka
1/2 of Lillet blanc
Garnish with a grapefruit twist
