MANTECATURA

The secret to making a delicious risotto lies in a perfect stirring (mantecatura)! 👩‍🍳

A proper stirring is what gives you that deliciously creamy and smooth texture.

To mantecare risotto, you should start by adding a small amount of hot broth or stock to the rice and stirring continuously with a wooden spoon. Keep the heat at a medium level to ensure the broth is slowly absorbed into the rice.

As the broth is absorbed, continue to add more liquid, one ladleful at a time, and keep stirring. The key is to not let the rice dry out or stick to the bottom of the pan, so make sure to keep adding liquid and stirring until the rice is fully cooked.

Once the rice is cooked to your liking, remove it from the heat and add a generous amount of butter and grated Parmigiano-Reggiano cheese. This is the final touch that will give your risotto its creamy and velvety texture.

Stir the rice vigorously, allowing the butter and cheese to melt and blend with the rice, until perfection.

That's why we want to share with you 3 ESSENTIAL tips on how to perfectly boil pasta!🍝

1) Use a large pot of salted water - The pasta needs plenty of room to move around and cook evenly. A general rule is to use 4-6 quarts of water for every pound of pasta, and add 1-2 tablespoons of salt per quart of water.

2) Don't overcook the pasta - Al dente is the way to go! Cook the pasta until it is tender but still firm to the bite. This ensures that the pasta will hold its shape and texture when mixed with sauce. Plus, overcooked pasta is just mushy and unappetizing.

3) Salt the water just when it starts to boil, right before adding the pasta. Use about 1-2 tablespoons of salt per quart of water. Salting the water will not only add flavor to the pasta, but it will also help to season it evenly.

Of course now you no longer have any excuse to make it wrong, pal. You're ready to cook up a delicious bowl of pasta! 🤤

CARNAROLI RICE

The main one is harvesting: it takes more than 40 hours of labour and 75000 flowers to collect just one pound of the spice. 🤯

You can use just one small part of the flower, and it requires warm climates and sunlight. It flowers only during October and November, and it’s produced almost only in Italy, Spain and Iran.

Now you’ve set the dinnerware and created the coziest atmosphere with proper lighting and maybe some nice candles. You set the table with care, and made sure that plates, glasses, and flatware are arranged symmetrically. 🧐

It’s time then for the final touches.

Here’s the part where you can customize your dinner experience by making it more personal. You can express yourself and your unique personality, or you may decide to focus on your guest and on what may be a pleasant surprise for them.
