Long weekends call for big breakfasts! Biscuits & Country Sausage Gravy is an easy winner every time. Every. Single. Time! Seriously, who can resist fluffy buttery biscuits with rich and creamy sausage gravy?? And I bet you already have most of the ingredients on hand too.

✨Gravy Recipe✨
1 pound of your favorite ground sausage (I like regular or maple Jimmy Dean)
3 tbs butter
3 tbs flour
2 cups whole milk
1/4 cup heavy cream
1 tsp black pepper
Pinch of nutmeg
Salt to taste (careful if using salted butter, as sausage is already salty too)
-Brown and crumble sausage in large skillet on medium heat.
-Drain excess fat but leave a tablespoon or so behind with the cooked meat.
-Turn heat down to low then add butter to pan with sausage and pan drippings.
-Once melted whisk in flour and combine until well incorporated with no lumps. Cook for 3-4 minutes until light tan in color.
-Slowly add in milk and heavy cream while steadily whisking to combine.
-Add pepper, nutmeg, and salt.
-Turn heat up until mixture comes to a boil, whisking constantly.
-Reduce heat to low simmer for about 6-8 minutes until desired thickness is reached. (If too thick, gradually whisk in more milk)
-Serve over fresh baked biscuits

Super Easy Summer Side! If you’re looking for a healthy dish that packs a big flavor punch then Roasted Red
Pepper and Baby Bella Cauliflower Rice will be your jam!

☀️Recipe ☀️
12 oz bag frozen riced cauliflower
1 red bell pepper (yellow, orange or green works too)
1 cup fresh baby bella mushrooms (white button or any mushroom of choice works too)
1-2 tsp olive oil
1 tsp salt
1/2 tsp black pepper
1/2 tsp dried parsley
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp cumin
small pinch of cayenne pepper

Preheat oven to 400 degrees. Thinly slice red pepper and mushrooms. Take frozen cauliflower and spread into an even layer onto sheet pan. Break up any clumps. Top evenly with sliced red pepper and mushrooms. Drizzle with olive oil then sprinkle with salt, black pepper, parsley, garlic powder, onion powder, cumin and cayenne pepper (omit if you aren’t into spicy things). Bake for about 25 mins, turning the rice once with a spatula about halfway through cooking. Remove from oven, mix together and serve warm. Great as leftovers or for meal prep!

Light and Easy Lemon Chicken Soup might be the best thing that’s happened all week! 🍋💖🍋
Recipe 👇
Ingredients:
2 stalks celery
2 medium carrots
1 medium onion
3 cloves garlic
Salt and pepper to taste
2 tbs olive oil
1 tbs butter
2 tbs flour
1/4 teaspoon Italian seasoning
8 cups chicken stock
1.5 cups cooked shredded chicken breast
1 cup ditalini (or any small cut) pasta
1 lemon
1 teaspoon parsley
Directions:
1. Finely chop celery, carrots, onion, and garlic. Sauté on low in butter and olive oil in large pot for 7-10 minutes.
2. Stir in flour, Italian seasoning, salt, and pepper and cook for an additional 2-3 minutes.
3. Add chicken stock and stir until well combined with flour mixture. Bring to simmer for about 15 minutes.
4. Add cooked chicken and uncooked pasta. Boil for 7-8 minutes for al dente pasta (will cook more as soup sits so be careful not to over cook)
5. Reduce heat to low. Add parsley, juice of lemon and lemon rind. Stir to combine and let sit for 10 minutes to allow lemon flavors to permeate the broth.
6. Remove lemon rind and serve warm. Pasta will soak up liquid. If not serving immediately, add 1-2 more cups of stock.

Air Fryer Chicken Chimichangas are so good you won’t even notice you’re eating healthy! Moist chicken and cheese cheese filling wrapped in a crisp flour tortilla shell make this everything you need for your next Mexican night at home! Pair with spicy bean dip and you’re definitely in business!
✨Recipe ✨
2 cups cooked shredded chicken
1 cup cheddar jack cheese
1/4 cup picante sauce
1/2 packet taco seasoning mix plus 1tsp cumin and 1 tsp chili powder
1/4 cup jarred queso (any brand)
4 medium sized flour tortillas
Cooking spray (I like butter flavor)
Fresh Cilantro
Guacamole
Picante Sauce
Queso

Combine first 6 ingredients in mixing bowl. Divide into four portions. Pre heat air fryer to 400 degrees. While fryer is heating, put filling into four tortillas and make sure to wrap each one tightly, then spray both sides with cooking spray.

Place 4 wrapped tortillas seam side down in fryer basket. Bake for 10 minutes. Let cool for 2-3 mins then take out using tongs and top with cilantro, guacamole, picante sauce and remaining queso to taste.

Traditional Turkey Tetrazzini is a long time fave at our house but this quick and easy version is a super close second. Especially on a busy cold night!



Recipe
16 oz cooked spaghetti noodles
1/4 cup salted butter, softened
1 10.5 oz can cream of mushroom soup
1 10.5 oz can cream of chicken soup
3/4 cup sour cream
1 tsp granulated garlic
1/2 tsp black pepper
1/8 tsp nutmeg
3/4 cup chicken broth
3 cups chopped or shredded turkey (cooked)
1/4 cup Parmesan cheese
1 cup shredded mozzarella or Italian blend cheese
1/4 cup breadcrumbs (panko or regular)
1/4 cup salted butter, cubed
(no salt is needed unless you use unsalted butter)
Preheat oven to 350 degrees. Cook noodles to package directions in salted water. While noodles are boiling chop or shred turkey (I use just the breast meat but you could use light or dark meat or a mixture of both). Then combine softened butter, soups, sour cream, seasoning and chicken broth in large mixing bowl. Drain noodles and add to mixture in bowl along with the turkey; mix until combined.
Spray 9 by 13 casserole dish with cooking spray or coat with butter. Then add all ingredients in bowl to casserole dish. Top with both cheeses and breadcrumbs, then drop the cubed butter evenly over top of casserole. Bake 35-40 minutes, uncovered. Let stand 5-10 mins to set. Serve with garlic bread, salad, or your favorite veggie.
