No Mess Ice Pack!

Nobody likes a wet drippy ice pack. We are already hurting and just want to get that cold pack on it so we can start to feel better. This tip solves that issue.

Wednesday Recipe! This is an easy recipe the family will love, but definitely not a low-calorie meal!


Ingredients

1 lb lean ground beef
1 cup diced yellow onion
1 tablespoon minced garlic
2 cups chicken broth
2 cups minute rice
10.5 oz Rotel diced tomatoes and green chilies
½ teaspoon salt
½ teaspoon pepper
1 tablespoon onion powder
1 cup salsa con queso
2 cups shredded nacho cheese

Instructions

1. Place a pound of lean ground beef into a large skillet over medium-high heat.
2. Add some diced onions to the skillet.
3. Stir the ground beef and onions together well.
4. Continue cooking until the ground beef is fully browned.
5. Add chicken broth to the skillet.
6. Add uncooked minute rice to the skillet.
7. Stir and spread the rice out until it is all submerged in the liquid.
8. Bring the liquid to a boil, place a lid on the pot, reduce the heat to low, and let the rice cook for 5 minutes.
9. After 5 minutes, I removed the lid and stirred the rice and ground beef well.
10. Add a can of Rotel diced tomatoes and green chilies to the skillet. Also add some salt, pepper, and onion powder to the skillet. Continue cooking until no liquid remains in the bottom of the skillet.
11. Add some store-bought salsa con queso to the skillet and stir well.
12. Add some shredded nacho cheese to the skillet and stir it into the ground beef and rice mixture.
Then the cheesy ground beef and rice is ready to scoop and serve

Wednesday Recipe! Here's an easy, yummy back-to-school meal! Let me know what you think if you try it!



Ingredients

8 oz spaghetti
1 tablespoon olive oil
½ lb ground beef, or Italian sausage, optional
½ cup onion, chopped
2 cloves garlic, minced
24 oz marinara sauce
1½ cups whole-milk ricotta cheese
1 large egg
1½ cups low-moisture mozzarella, shredded
½ cup Parmesan cheese, grated
½ teaspoon dried oregano
½ teaspoon dried basil
¼ teaspoon red pepper flakes, optional
Salt and black pepper to taste
Fresh parsley for garnish

Instructions

Boil spaghetti 2 minutes less than package directions for al dente. Drain and toss with olive oil.
Brown beef or sausage in a skillet; drain fat. Add onion, cook 3 minutes; add garlic, cook 30 seconds. Add marinara and seasonings; simmer 5 minutes.
Whisk ricotta with egg and a pinch of salt until smooth.

Toss spaghetti with two-thirds of the sauce, reserving the rest.
Grease a 7-inch round cake pan. Layer: half the spaghetti, all the ricotta mixture, ½ cup mozzarella, ¼ cup Parmesan, remaining spaghetti, reserved sauce, remaining mozzarella, remaining Parmesan.
Preheat air fryer to 350°F for 3 minutes. Air fry for 12 minutes until cheese is deeply golden and edges bubble.
Rest 5 minutes. Garnish with parsley and serve.

Notes
For leftover spaghetti: skip step 1, bring pasta to room temperature, add 2–3 tablespoons extra sauce, cook 8 minutes first then add top mozzarella and cook 4 more minutes.
Pan size: 6–8 inch round cake pan or 7-inch square; must fit in your air fryer basket with ½ inch clearance.
Storage: refrigerate up to 4 days; freeze unbaked up to 3 months.
