Good Old Fashion Mac and Cheese
Ingredients:
3 cups dry elbow macaroni
4 Tbsp salted butter
2 (370 mL/12 oz) cans evaporated milk
1/3 cup milk of choice
2 large eggs
1/4 tsp garlic salt
4 cups cheddar cheese, shredded
2 cups mozzarella cheese, shredded
1 tsp paprika
Cooking Instructions:
Pasta Perfection: In a large pot of boiling salted water, cook the elbow macaroni until al dente. This usually takes about 8 minutes. Drain well.
Creamy Foundation: In a separate pot, melt the butter over medium heat. Stir in the evaporated milk, your milk of choice, and the garlic salt. Keep stirring until the mixture is hot but not boiling.
Egg-cellent Addition: In a separate bowl, lightly beat the two large eggs. Now, this is crucial for a creamy texture: Gradually whisk about a quarter of the hot milk mixture into the eggs, then whisk the egg mixture back into the pot with the hot milk. This tempers the eggs and prevents them from scrambling.
Cheese Galore: Reduce heat to low and continue to cook, stirring continuously, until the mixture thickens and coats the back of a spoon.
Mix ’em up: Add the drained macaroni to the pot and stir to coat. Add 3 cups of cheddar cheese and the 2 cups of mozzarella cheese, stirring until the cheese is melted and the macaroni is evenly coated.
Serve in Style: Pour the macaroni and cheese into a serving dish. Sprinkle with the remaining 1 cup of cheddar cheese and paprika for that hint of smokiness and color.
